Apricots have a unique sweet aromatic flavour with the skin ranging in colour from pale yellow to deep orange. Apricots originated in China around 4000 years ago and are fantastic eaten fresh or used in cooking to make jams, pies and tarts, and of course in Apricot Chicken.

Apricots have a unique sweet aromatic flavour with the skin ranging in colour from pale yellow to deep orange.

Apricots originated in China around 4000 years ago and are fantastic eaten fresh or used in cooking to make jams, pies and tarts, and of course in Apricot Chicken. If the apricot has a green tinge, ripen it at room temperature for a few days. Once soft and ripe they may be stored in the crisper section of the fridge for 2 to 3 days.
