Choose firm white agaricus mushrooms that have a dry surface and white to cream colour. Store mushrooms in a brown paper bag on the lowest shelf in the fridge. Do not wash mushrooms before storing, instead, wipe with a damp cloth or paper towel to remove loose dirt before preparing.
Serving Suggestion: Marinated button mushrooms keep well in the fridge and are wonderful on salads or an antipasto platter. To prepare: Place 1 Kg washed button mushrooms in large pot, cover with water and add in the juice of one lemon. Bring to the boil and simmer for one minute. Drain and place in sterilised jars. Blitz together 1/2 cup red wine vinegar, 1/4 cup olive oil, one clove minced garlic, one tablespoon each chopped fresh parsley, oregano and sage. Pour over mushrooms. Seal and label the jars and store in the fridge for several weeks.
