Galangal is a root spice related to ginger. It has rough, brown skin over creamy white flesh. Galangal has a peppery, ginger-lime flavour that is hard to replicate. The crunchy flesh is most often thinly sliced or grated and used in Asian cuisine.

Choose firm galangal with pinkish stems and dry skin. It should not be wrinkled, soft or moist. Store galangal in the fridge for two to three weeks and break off knobs to use as needed.

Serving Suggestion: This Thai yellow curry paste has a fresh flavour and should be used right away or stored for a day or two. Thinly slice 5cm galangal, two stalks lemon grass, two garlic cloves, five spring onion bulbs and two red chillies that have been de-seeded. Place all ingredients in a blender and add one tablespoon ground fresh turmeric and two tablespoons fresh chopped coriander. Blitz until smooth, adding drops of coconut milk as necessary to move blades.

Did you know? Galangal is available in many spice shops as a dried and ground powder. This powdered form of galangal has a much sharper flavour than the fresh root and recipes need to be adjusted accordingly.
