Beetroot is a brightly coloured and versatile vegetable. It can be grated or chopped fresh for salads or boiled, baked and pureed. It’s sweet, juicy flavour will add interest to savoury recipes. The leaves are edible as well and have a flavour that resembles spinach.

Choose beetroot with smooth skins and fresh-looking stems and leaves. Avoid beetroot with splits or blemishes. Store beetroot in the fridge, wrapped in plastic for up to two weeks. Leaves can be stored in the fridge for two to three days.

Did you know? Betanin from beetroots is often used as a colorant in foods. Beetroot dye can be used on natural fabric and yarn as well. To dye wool yarn, grate 1kg beetroot into a stainless steel pot. Add one litre water and 750 millilitres vinegar to the pot and cook, covered, over a low flame for twenty minutes, making sure it doesn’t burn. Remove from heat and allow to cool. Once cool, strain the bits out with a sieve. Let the yarn steep in the dye for about fifteen hours, or until desired colour is reached. Rinse until the water runs clear. Hand wash dyed wool separately to prevent the dye spreading.
