Bok choy is a Chinese variety of cabbage loved for its mustard type flavour and interesting texture. The pale green stalks have a texture that resembles celery, whilst the dark green leaves are reminiscent of spinach. It is a favourite stir-fry vegetable due to the fact that it takes very little time to cook. The inner leaves are tenderer and can be eaten fresh as part of a salad.

Choose bok choy with firm, brightly coloured stalks and fresh looking leaves. Wrap the bok choy in a damp kitchen towel and store in the fridge for four to five days.

Cooking tips: Bok choy is best when lightly steamed or stir-fried. To steam bok choy: Separate and wash the leaves and stems. Place in a steamer and cook for two to three minutes, until just tender. To stir-fry: Heat one tablespoon sesame oil in a wok. Add the bok choy and cook for two minutes, stirring frequently. Toss cooked bok choy with soy sauce and sesame seeds, or use a favourite recipe.
