Choy sum is a flowering Asian green, closely related to bok choi. It has crunchy green stems topped with wide, flat leaves. The yellow flowers are edible and have a mustard-like flavour and bite. Choy sum is delicious in soups, but is most commonly stir-fried as a side dish.
Choose Choy sum that has fresh looking leaves and flowers and crisp, firm stems. Avoid choy sum that is wilted or discoloured. Store loosely wrapped in the fridge for two to three days.
Serving Suggestion: Heat two tablespoons peanut oil in a wok over medium heat. Add 500g choy sum and one minced garlic clove. Cook until choy sum is wilted. Meanwhile, in a separate bowl, combine one teaspoon each of corn flour and caster sugar with three tablespoons water, two tablespoons soy sauce and two tablespoons oyster sauce. Pour the sauce mixture over the choy sum in the wok and cook two minutes, stirring often, until the sauce thickens. Serve as a side dish or over steamed rice.
