Curry leaves are the leaves from the neem tree. They have a flat, pointed-oval shape and deep green, glossy colour. The leaves resemble bay leaves, and share a name with curry powder, but are nothing like either one of those. Curry leaves have an aroma like a ripe tangerine and impart a pungent lemon-type flavour that is unmatched by any other spice. Curry leaves are most often found in Southeast Asian vegetarian dishes, but can be used in many ways and in almost any recipe where the distinctive flavour is desired.

Choose curry leaves that are fresh-looking and deep green. Avoid any leaves that are bruised or discoloured. Store curry leaves in a paper bag in the fridge for up to two weeks. If longer storage is desired, the leaves may be air-dried, but will lose a bit of their flavour.

Did you know? It is common for people in some parts of Southeast Asia to chew fresh curry leaves to aid in digestion and prevent diarrhoea. Curry leaves are added to herbal creams as well, as they are thought to be extremely good for the skin.
