Fennel

Fennel has a white bulb topped by green stalks and feathery leaves. Every part of fennel is edible and has a mild, sweet, anise-like flavour. The strongest flavour is found in the bulbs and seeds, which are used for cooking. The stalks are wonderful for adding flavour near the end of cooking, whilst the leaves will add interest to salads. Fennel is a staple in many Italian dishes, but the flavour will complement almost any style of cuisine.

Choose fennel with bright white bulbs, fresh, bright-green stalks and light, feathery leaves. Avoid fennel with scars and soft spots on the bulb, or wilted and discoloured leaves. Store fennel, wrapped in plastic, in the fridge for four to five days.

Serving Suggestion: Fennel pairs very well with oranges when used to top a salad. Peel, core and thinly slice one bulb of fennel. Toss the fennel with two large oranges that have been peeled, sectioned and sliced. Place the fennel and oranges on a large bed of mixed leaves and toss with a favourite sweet and tangy vinaigrette. Some other ingredients that work well in this salad are Kalamata olives, dried cranberries, red onion, almonds and pecans.
