Lebanese Eggplant

Lebanese eggplant is slender like a zucchini and deep purple to black in colour. It has a thin skin and sweetly delicate flavour. It is often used in Mediterranean and Asian cuisine. Lebanese eggplant can be fried, stir-fried, grilled or roasted.

Choose Lebanese eggplant with smooth skin and few blemishes and store in the crisper section of the fridge for up to five days. Avoid any that are mushy or have soft spots.  Always cut eggplant with a stainless steel knife. A carbon steel knife will cause a reaction with the phytonutrients in the fruit and cause it to turn black.

Did you know? The modern eggplant is very nutritious and well loved in many countries, but it hasn’t always been that way. The odd appearance and bitter flavour of early varieties led people to think of the plant as more of a poison than a food. It was blamed for everything from insanity to cancer, even being called a mala insana or “crazy apple” in Renaissance Italy.
