Oyster mushrooms are large and most often creamy-beige or pink in colour. Along with fluted caps that resemble oyster shells, oyster mushrooms have a delicate flavour and smell with a distinctive hint of seafood. They are often used in Asian cuisine and are excellent stir-fried and in soups.

Choose firm mushrooms that have a dry surface. Avoid mushrooms that are wrinkled or have wet spots. Store mushrooms in a loosely closed brown paper bag on the lowest shelf in the fridge. Do not wash mushrooms before storing, instead, wipe with a damp cloth or paper towel to remove loose dirt before preparing.

Serving suggestion: Sautéed oyster mushrooms have a flavour that is similar to abalone and is a healthy vegetarian alternative to seafood. To prepare: Shake 500g oyster mushrooms in flour seasoned with sage, thyme, garlic, salt and pepper until coated. Heat 3 tablespoons oil and 5 tablespoons butter in a frypan and sauté the flour coated mushrooms for two minutes on each side, or until golden brown. Serve immediately with lemon wedges.
