Queensland Blue Pumpkin

Queensland Blue Pumpkins are a large variety of pumpkin, native to Australia. They are considered an heirloom variety, characterised by a silver-grey to blue skin and flat top and bottom. Inside, the flesh is a deep orange colour with a dry texture and mildly sweet flavour. This pumpkin can be cooked in a variety of ways and will complement both sweet and savoury recipes. The seeds are edible as well after roasting and can be eaten alone or added to salads.

Choose Queensland Blue Pumpkins that are free from deep scars and soft spots. This is a long storing variety and can be kept in a cool, dark place for five to six months.

Serving Suggestion: Pumpkin fritters are simple to make and taste like a special treat. In a large bowl, combine 100g flour, one teaspoon baking powder, 1/4 teaspoon cinnamon and two eggs. Add enough water to make a batter. Dip thin slices of pumpkin in the batter, moving them around to thickly coat. Fry each battered slice of pumpkin in hot oil until golden. Dust with icing sugar and serve hot.
