Swiss Brown Mushrooms

Swiss brown mushrooms have dark brown skins and a bold, robust flavour. They are related to the white agaricus variety, but have a much stronger flavour. They are perfect for soups, stews and risottos. The fully mature and open caps are often called Portobello mushrooms.

Choose firm mushrooms that have a dry surface and are tan to dark brown colour. Store mushrooms, separated by paper towels, in a brown paper bag on the lowest shelf in the fridge. Do not wash mushrooms before storing, instead, wipe with a damp cloth or paper towel to remove loose dirt before preparing.

Did you know? Swiss brown mushrooms were the original strain of mushrooms in the family. A mutant strain was discovered in the 1920’s that had a mild flavour and creamy white colour. People were fond of the new variety and began to cultivate it. Today, white button mushrooms are the most popular variety, preferred by most consumers.
