White sweet potatoes are long and tube shaped with tapered ends. They have brown skin and pale yellow to white flesh. White sweet potatoes are not as sweet as gold sweet potatoes, and have a drier flesh. They are delicious baked, fried, boiled or mashed.
Choose white sweet potatoes with thin skins that are free from bruises or soft spots. Avoid those with shoots or green patches. White sweet potatoes can be bought in bulk and stored in a cool, dry place.
Serving Suggestion: Sweet potato gnocchi is a fun dish to make with a friend and has a well-rounded flavour. Bake, peel and mash two large white sweet potatoes. Mix the potato with one clove minced garlic, one tablespoon chopped fresh thyme, 1/2 teaspoon salt and one egg. Slowly add two cups of flour until the dough is soft and not terribly sticky. Take a section of the dough and roll it into a rope about 4cm thick. Repeat the process until all of the dough is used. Cut the rope into 3cm sections and drop them into boiling water. When the pieces float, spoon them out and serve with a drizzle of olive oil.
